Pistachios have an excellent shelf life and may be stored at length without
spoilage under proper circumstances. Temperatures of 32-40 degrees F should
be maintained with a relative humidity of 70% for roasted pistachios.
Pistachios stored in bulk containers should be frequently rotated for optimum
freshness. In the event that they do become soggy, toasting the pistachios
for 15-20 minutes at low heat (approximately 200 degrees) will renew them.
